Tuna Salad w/ Buckwheat & Raisins

Ingredients

  • Salad:
  • 10 oz. solid white tuna in water
  • 1 stalk celery, chopped
  • 1/4 red onion, chopped
  • 1/8 cup raisins, chipped
  • 1/2 cup instant buckwheat barley
  • 1 tablespoon fresh ginger, grated
  • Dressing:
  • Juice of 1/2 lemon
  • 1 tablespoon soy sauce
  • 1/2 teaspoon teriyaki sauce
  • Juice of 1/4 orange
  • 1 teaspoon vinegar
  • Toast (optional)

Directions

  1. In a large bowl combine all the ingredients for the tuna salad.
  2. In a small cup mix the ingredients for a dressing. Pour dressing over tuna salad and toss. Serve over toast or with your favorite crackers.
