Tuna Salad w/ Buckwheat & Raisins

- Salad:
- 10 oz. solid white tuna in water
- 1 stalk celery, chopped
- 1/4 red onion, chopped
- 1/8 cup raisins, chipped
- 1/2 cup instant buckwheat barley
- 1 tablespoon fresh ginger, grated
- Dressing:
- Juice of 1/2 lemon
- 1 tablespoon soy sauce
- 1/2 teaspoon teriyaki sauce
- Juice of 1/4 orange
- 1 teaspoon vinegar
- Toast (optional)
Directions
- In a large bowl combine all the ingredients for the tuna salad.
- In a small cup mix the ingredients for a dressing. Pour dressing over tuna salad and toss. Serve over toast or with your favorite crackers.
