Ingredients

  • 8 slices French bread , ½ inch thick
  • 2 tomatoes, cubed
  • 1 tablespoon fresh basil
  • 4 tablespoons grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 clove garlic, crushed
  • seasoning salt to taste
  • ground black pepper to taste

Directions

  1. Preheat broiler. Cover a medium sized baking sheet with a single layer of bread slices. Brush the slices with olive oil. Dice the tomatoes. In a mixing bowl, combine the tomatoes, olive oil and basil. Mix for two minutes. Place bread under broiler until lightly browned. Remove from broiler and top with the tomato mixture.
