Thrifty Pound Cake

My Mom says this is the best Pound Cake she has ever had. This recipe comes from my Italian neighbor Mrs.Salfi. She was a genius when it came to baking. Cakes, cookies, apple dumplings, apple fritters, pies, cakes,breads etc you name it she made it. My Mom has tried many pound cake recipes but always comes back to this one because it the best. This recipe has a simple glaze. But its wonderful plain or iced as a birthday cake, or served with a fruit compote. This cooking time is based or a bundt pan, adjust cooking time for other pans

Ingredients

  • Cake:
  • 3 cups of flour
  • 1/2 tsp baking powdr
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1 cup butter, softened
  • 2 cups sugar
  • 4 eggs (unbeaten)
  • 1 tsp vanilla
  • 1 tsp lemon or orange juice
  • 1 cup buttermilk or (3/4 cup milk and 1/4 cup of white vinegar)
  • Glaze: (optional)
  • 1 cup confectioners sugar
  • 2 tbsp milk
  • lemon or orange rind,grated (optional)

Directions

  1. Preheat oven 350
  2. grease a bundt pan
  3. In a small bowl sift together flour, baking powder, baking soda and salt
  4. In a large bowl beat together softened butter, sugar, eggs, vanilla and juice.
  5. Combine flour mixture to batter and add buttermilk.
  6. Beat for 2-3 minutes.
  7. Pour into greased pan.
  8. Bake 350 for approx 70mins testing around 50-55mins with a toothpick
