Prep time: European
Cook time: Servings: 1 Loaf

Ingredients

  • 450 ml lukewarm water (almost 2 cups)
  • 1 tbsp. yeast
  • 500 g whole grain flour (any kind, in this picture I used whole wheat flour) (17.6 ozs)
  • 50 g raw sunflower seeds (1.8 ozs)
  • 50 g sesame seeds (1.8 oz)
  • 50 g flaxseed meal (I used whole flaxseed and when I made my flour, just threw it in the flour mill along with the wheat berries) (1.8 oz)
  • 2 tsp sea salt
  • 2 tbsp. apple cider vinegar

Directions

  1. Add the yeast to the lukewarm water and stir with wire whisk until dissolved. Add vinegar.
  2. Combine all of the dry ingredients, pour water/yeast/vinegar mix over it and stir with wooden spoon until combined.
  3. Spray loaf pan (I use a pampered chef stone) with olive oil cooking spray. Put dough into pan and smooth out. Sprinkle oats or any seeds over it and press down a little. Don't let it rise!!! Put pan into cold oven (important, don't preheat!) and turn on to 400°F (200°C). Bake for 60 minutes. Take out of pan and let cool a bit before slicing.
