Tex-Mex Tacos al Carbon

Use marinated steak, skirt steak or flank steak (my fave) for these grilled beef tacos. Serve with warm flour or corn tortillas.

If you like beef well-done, spring for rib-eye, as flank and skirt steak will toughen.

Suggested Condiments:

grilled scallions
sour cream
guacamole
pico de gallo
shredded lettuce
shredded cheese
salsa
lime slices

You can use this grilled beef for taco salad, enchiladas, quesadillas, etc.

Ingredients

  • Hickory wood and charcoal for direct grilling
  • 2 lbs. choice beef
  • marinade:
  • 2 tbs. olive oil
  • 1/4 cup fresh lime juice
  • 2 cloves chopped garlic
  • 1/4 cup cilantro
  • 1/2 tbs. ground pepper
  • 2 tsp. sea salt
  • 1 chopped jalapeno
  • 1/2 tbs. Tex-Mex Diablo Dust or taco seasoning
  • 1 tsp. cumin

Directions

  1. Lightly score beef.
  2. Add marinade ingredients to a plastic bag with beef.
  3. Marinate 12-24 hours.
  4. Fire up the grill for direct grilling.
  5. Grill beef medium rare.
  6. Let reast 10 minutes.
  7. Slice against the grain.
