Ingredients

  • 1 (9 inch) deep dish unbaked pie shell
  • 2 (7 x 4 inch) slices Swiss cheese
  • 1/2 c. minced spinach (liquid removed)
  • 1/2 c. sliced mushrooms
  • 3 Large eggs, beaten
  • 1 c. half and half
  • 1/2 teaspoon salt
  • 2 teaspoon flour
  • 1 can tender chunk ham (flaked apart)
  • 1/2 c. shredded sharp Cheddar cheese

Directions

  1. Place Swiss cheese slices side by side in pie shell; sprinkle proportionately with spinach and mushrooms. Set aside. In small mixing bowl mix the Large eggs, half and half, salt and flour. Pour over spinach and mushrooms; sprinkle proportionately with flaked ham and top with Cheddar cheese. Bake 45 min at 350 degrees. You can substitute 1/2 c. minced broccoli in place of spinach.
