Tahini courgettes

Easy and delicious appetizer or a side dish.

Ingredients

  • 1000 g courgettes, thickly sliced
  • Pinch of salt
  • 200 ml ground sesame paste (tahini )
  • 1 garlic clove, crushed
  • 2 tbs olive oil
  • 2 tbs lemon juice (from ½ lemon)
  • ½ cup cold water

Directions

1. Place the courgette slices on parchment paper, season with salt, and bake them in the oven at 230°C for 30 minutes, turning them over from time to time. When done, leave to cool.
2. Meanwhile, process and mix tahini paste, garlic clove and olive oil in a food processor or blender.
3. Add the water and blend until smooth.
4. Place the courgettes on a platter and trickle over the tahini cream. Serve with warm pitta bread or warm tortilla pancakes cut into small triangles.
