Sweet Corn Bread

A simple recipe that leaves the cornbread with a crusty exterior and moist, crumbly center.

Ingredients

  • 1 cup yellow corn meal
  • 1 cup all purpose flour
  • 1/3 cup white sugar
  • 3 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 egg
  • 1/2 stick butter, melted
  • 2 Tbs vegetable oil

Directions

  1. Preheat oven to 425 degrees F.
  2. In a large bowl combine corn meal, flour, sugar, salt, and baking powder.
  3. Add milk, egg, and butter. Mix until fairly smooth, about 1 minute.
  4. Grease cast iron skillet with vegetable oil. Pour batter into prepared skillet and bake for 20 minutes or until toothpick inserted into center comes out clean.
  5. Allow to cool before serving.
