Sunday Supper Shepherd's Pie

Ingredients

  • 1 recipe mashed potatoes made with 1 1/2 lbs. russet potatoes
  • or
  • 1 1/2 lbs. potatoes, cut in small chunks, and cooked in salted water.
  • 1/2 stick butter
  • 1/2 cup milk or half and half
  • salt and pepper to taste.
  • 1 lb. ground beef or lamb
  • 1 small onion, diced
  • 1 stalk celery, sliced thin
  • 1 carrot, peeled, diced
  • 2 cloves garlic, minced
  • 2 tbs. flour
  • 1 tbs. tomato paste
  • 1 cup beef broth
  • 1 tbs. Worcestershire
  • 1 tbs. chopped parsley
  • 1/4 tsp. dry thyme
  • 1 small can corn, drained
  • 1/2 cup frozen peas
  • 1 cup sharp cheddar cheese, shredded, divided
  • paprika

Directions

  1. Heat oven to 375 F.
  2. Cook the potatoes until tender.
  3. Heat butter and milk, pour over potatoes, mash.
  4. Add salt and pepper to taste.
  5. Cook meat in a skillet, reserving fat.
  6. Remove meat, add carrots, celery, and onions and saute for 4-5 minutes, add garlic, cook 30 seconds.
  7. Stir in flour and tomato paste.
  8. Slowly add broth, then the rest of the ingredients, including the meat and half the cheese.
  9. Season with salt and pepper.
  10. Pour into a 2 qt. baking dish.
  11. Spread potatoes on top.
  12. Bake 30 minutes.
  13. Sprinkle on cheese and paprika.
  14. Turn off oven.
  15. Serve when cheese is melted.
