Sunday Supper Shepherd's Pie

- 1 recipe mashed potatoes made with 1 1/2 lbs. russet potatoes
- or
- 1 1/2 lbs. potatoes, cut in small chunks, and cooked in salted water.
- 1/2 stick butter
- 1/2 cup milk or half and half
- salt and pepper to taste.
- 1 lb. ground beef or lamb
- 1 small onion, diced
- 1 stalk celery, sliced thin
- 1 carrot, peeled, diced
- 2 cloves garlic, minced
- 2 tbs. flour
- 1 tbs. tomato paste
- 1 cup beef broth
- 1 tbs. Worcestershire
- 1 tbs. chopped parsley
- 1/4 tsp. dry thyme
- 1 small can corn, drained
- 1/2 cup frozen peas
- 1 cup sharp cheddar cheese, shredded, divided
- paprika
Directions
- Heat oven to 375 F.
- Cook the potatoes until tender.
- Heat butter and milk, pour over potatoes, mash.
- Add salt and pepper to taste.
- Cook meat in a skillet, reserving fat.
- Remove meat, add carrots, celery, and onions and saute for 4-5 minutes, add garlic, cook 30 seconds.
- Stir in flour and tomato paste.
- Slowly add broth, then the rest of the ingredients, including the meat and half the cheese.
- Season with salt and pepper.
- Pour into a 2 qt. baking dish.
- Spread potatoes on top.
- Bake 30 minutes.
- Sprinkle on cheese and paprika.
- Turn off oven.
- Serve when cheese is melted.
