Ingredients

  • 3 c. tender lettuce leaves (butter or possibly green leaf)
  • 2 c. mixed salad greens (arugula, chicory, etc.)
  • 1/2 c. shredded carrot
  • 1/2 c. minced cucumber
  • 1 c. cooked chickpeas
  • 3 x cherry tomatoes, halved (or possibly more if preferred)
  • 2 Tbsp. minced pecans
  • 1 Tbsp. minced fresh basil
  • 1 Tbsp. chopped fresh parsley
  •     Edible flowers for use as garnish (optional)

Directions

  1. Method
  2. Divide the greens among 4 large dinner plates and top with all the remaining ingredients except the dressing in a visually pleasing arrangement.
  3. Serve the dressing on the side.
  4. Serves 4
  5. Mix and match ingredients according to preference and availability.
  6. The idea here is to have a variety of fresh vegetables which can be esthetically arranged to celebrate summer.
