Summer Solstice Salad With Goddess Green Herb Dressing
Ingredients
- 3 c. tender lettuce leaves (butter or possibly green leaf)
- 2 c. mixed salad greens (arugula, chicory, etc.)
- 1/2 c. shredded carrot
- 1/2 c. minced cucumber
- 1 c. cooked chickpeas
- 3 x cherry tomatoes, halved (or possibly more if preferred)
- 2 Tbsp. minced pecans
- 1 Tbsp. minced fresh basil
- 1 Tbsp. chopped fresh parsley
- Edible flowers for use as garnish (optional)
Directions
- Method
- Divide the greens among 4 large dinner plates and top with all the remaining ingredients except the dressing in a visually pleasing arrangement.
- Serve the dressing on the side.
- Serves 4
- Mix and match ingredients according to preference and availability.
- The idea here is to have a variety of fresh vegetables which can be esthetically arranged to celebrate summer.
