Stuffed French Toast

A very nice banana filling stuffed French toast. Spicy and yummy!

Ingredients

  • 2 ripe bananas, mashed
  • grated nutmeg
  • 1/8 teaspoon cinnamon
  • 2 teaspoons dark brown sugar
  • 1 tablespoon chopped almonds or walnuts
  • 6 whole wheat bread slices
  • 3 organic eggs
  • 1 tablespoon cream
  • sprinkle of nutmeg and cinnamon
  • olive oil
  • powdered sugar
  • chopped nuts
  • syrup

Directions

  1. Mash the bananas
  2. Stir in the cinnamon, brown sugar, nutmeg and nuts
  3. Mix well
  4. Spread the banana mixture onto three slices of bread and top with remaining slices
  5. Heat the olive oil over medium heat in a non-stick pan
  6. Beat the eggs with the additional cinnamon, nutmeg and the cream
  7. Dip the banana sandwiches in the egg mixture
  8. Place in heated pan and brown both sides, approximately 3 minutes per side
  9. Cut diagonally and place on plate
  10. Garnish with syrup of choice, powdered sugar and remaining nuts.
  11. Enjoy!
