Ingredients

  • 2 lb beef stew meat -- cut into 1" cubes
  • 1 Tbsp. veg. oil
  • 4 c. carrots -- sliced
  • 2 med parsnips -- sliced
  • 1 lrg onion -- sliced
  • 1 stalk celery -- sliced
  • 1/2 tsp grnd ginger
  • 1/4 c. tapioca -- (quick-cooking)
  • 14 1/2 ounce diced tomatoes -- canned, undrained
  • 1/4 c. vinegar
  • 1/4 c. molasses
  • 1 tsp salt
  • 1/2 tsp grnd black pepper
  • 1/2 c. raisins

Directions

  1. In a large skillet brown meat, a third at a time, in warm oil. Drain off fat.
  2. In slow cooker, place carrots, parsnips, and celery. Sprinkle tapioca over vegetables. Add in meat. Combine un-liquid removed tomatoes, vinegar, molasses, salt, pepper, and grnd ginger; pour over meat. Cover; cook on low-heat setting for 9 to 10 hrs or possibly on high-heat setting 4 to 5 hrs. Stir in raisins; cover and cook for 30 min more.
  3. Yield: 8 servings.
