Shrimp And Pasta Stir Fry

Ingredients

  • 1/2 lb medium shrimp unpeeled
  • 1/4 c. Nonfat Mayonnaise
  • 1/4 c. Chicken Broth low sodium
  • 1 tsp Lemon Rind grated
  • 1 Tbsp. Lemon Juice
  •     Vegetable Cooking Spray
  • 2 Tbsp. Vegetable Oil
  • 1 Tbsp. Ginger Root grated
  • 1 x Clove Garlic chopped
  • 1 c. Asparagus Spears diagonally sliced in 1" pieces, about 1/2 lb
  • 2 c. Pasta penne
  • 1/4 tsp Lemon Pepper

Directions

  1. Peel and devein shrimp, set aside. Combine mayonnaise and next 3 ingredients in bowl; stir well with a wire whisk, set aside. Coat a wok orlarge nonstick skillet with cooking spay; add in oil, (I used my "homemade"
  2. extra virgin olive oil spay bottle, used maybe 1 tsp.) and place over medium-high heat till warm.
  3. Add in gingerroot and garlic; stir fry 1 minute. Add in shrimp and asparagus, stir fry 3 min oruntil shrimp is done. Add in mayonnaise mixutre and pasta; cook till thoroughly heated. Sprinkle with lemon pepper.
  4. Yield:2 servings (serving size 1 1/2 c.).
