Shallot Herb Grilled Corn

My immersion blender came with a small bowl and attachment that allows it to work like a food processor. I love it. It is great for small quantities such as this margarine rub for corn. I had a smidgeon of the mixture left over and used it on a grilled cheese sandwich. Yum!

Ingredients

  • ½ cup margarine
  • ½ cup chopped shallot
  • 1 tablespoon parsley flakes
  • 1 tablespoon dried cilantro
  • 1 teaspoon white vinegar
  • ½ teaspoon salt
  • 6 ears corn, husked and cleaned

Directions

  1. In a food processor or with an immersion blender mix the first six ingredients until fully blended.
  2. Lay out 6 pieces of foil that are large enough to wrap each ear of corn.
  3. Spread 1/6th of the rub evenly around each ear of corn.
  4. Wrap each ear in the foil.
  5. Grill over a medium flame for about 10 minutes, turning 1/3 rotation every 2-3 minutes.
