Scallops & Shrimp Primavera Overfettuccine

Ingredients

  • 1 pound scallops
  • 1 pound shrimp, cleaned
  • Julienne strips of carrots, zucchini, red & yellow peppers
  • 1 c. broccoli florets
  • 1 c. sliced mushrooms
  • 3 T butter
  • 1 pt. heavy cream
  • Salt, pepper & fresh parsley to taste
  • 3/4 c. grated cheese
  • 1 pound fettuccine

Directions

  1. Saute scallops and shrimp in butter or possibly 3-4 min. Remove from saucepan. Add in all vegetables with seasonings and saute 5-6 min. Pour heavy cream into the sauteed vegetables and simmer 5 min, then add in scallops, shrimp and grated cheese. Cook on low heat for another 5 min.Meanwhile, cook fettuccine according to instructions. Then put together everything and mix thoroughly. Serve immediately.
