Scallops & Shrimp Primavera Overfettuccine
Ingredients
- 1 pound scallops
- 1 pound shrimp, cleaned
- Julienne strips of carrots, zucchini, red & yellow peppers
- 1 c. broccoli florets
- 1 c. sliced mushrooms
- 3 T butter
- 1 pt. heavy cream
- Salt, pepper & fresh parsley to taste
- 3/4 c. grated cheese
- 1 pound fettuccine
Directions
- Saute scallops and shrimp in butter or possibly 3-4 min. Remove from saucepan. Add in all vegetables with seasonings and saute 5-6 min. Pour heavy cream into the sauteed vegetables and simmer 5 min, then add in scallops, shrimp and grated cheese. Cook on low heat for another 5 min.Meanwhile, cook fettuccine according to instructions. Then put together everything and mix thoroughly. Serve immediately.
