Ingredients

  • 3 lb Rolled rump roast
  •     Salt, pepper, healthy pinch of nutmeg
  • 4 Tbsp. Flour
  • 1 Tbsp. Oil
  • 1 x Clove garlic, crushed
  • 4 lrg Onions, sliced
  • 2 c. Warm beef broth
  • 2 Tbsp. Tomato paste
  • 1 Tbsp. Sugar
  • 1 Tbsp. Vinegar
  • 1 tsp Thyme
  • 1 x Bay leaf, broke

Directions

  1. Combine flour, salt, pepper, and nutmeg. Dust beef with seasoned flour.
  2. Heat oil in heavy pan; brown meat, then remove. Brown onions and garlic lightly in pan. Replace meat; add in remaining ingredients. Cover and bake at 350F till meat is tender, about 2 1/2 hrs. Throw away bay leaf. Serve with pan gravy.
