Savory Meat Loaf

Made with quick - oat meal. Similar to my Mom's recipe, but I buy low sugar ingredients for diabetics in household, and use egg whites for those with cholesterol problems. Mom always added horseradish instead of onion. Diabetic exchange =3 lean meat, 1 1/2 starch] Serves 6.

Goes Well With: Baked Potato, green beans

Ingredients

  • 1 egg or 2 egg whites
  • 1 cup Fat Free milk
  • 2 slices of bread, crumbled
  • 1/2 cup finely chopped onion
  • 1 tsp rubbed sage
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 pound lean ground beef [ or half & half ground beef & turkey]
  • 3/4 cup ketchup
  • 1/2 cup water
  • 2 TBS Brown Sugar
  • 2 TBS cider vinegar
  • 1 TBS Worcestershire Sauce.

Directions

  1. In a mixing bowl, combine the first 8 ingredients.
  2. Crumble the beef over the above mixture, mix well using clean hands. Shape into a loaf & place in a 11 X 7 X 2 baking idsh [or smaller].
  3. In a small bowl, mix water, brown sugar, vinegar & Worcestershire sauce. Pour sauce over the meat loaf. {Option for shortcut: use BBQ sauce}
  4. Bake at 325 degrees for 1 hour to 1 1/4 hours or until meat is no longer pink and a meat thermometer reads 160 degrees. Let stand 10 minutes before slicing.
