Sauteed Shrimp with Country Ham and Capers

Ingredients

  • 3 lbs extra large, unpeeled fresh shrimp
  • 1/3 cup butter
  • 1/3 cup olive oil
  • 1 cup thinly sliced country ham or proscuitto
  • 1/4 cup dry white wine
  • 2 tbsp fresh lemon juice
  • 1 tsp cajun seasoning (Salt Free)
  • 2 tbsp fresh minced parsley
  • French Bread or cheesy grits

Directions

  1. Peel and de-vein shrimp.
  2. Melt butter with olive oil in a large, deep skillet over medium high heat. Increase heat, add ham and shrimp. Cook, stirring constantly, for 3 to 5 minutes or until shrimp turn pink. Reduce heat to medium, add wine, lemon juice and cajun seasoning. Bring to a boil. Remove from heat.
  3. Pour into a large serving bowl or platter. Sprinkle with parsley. Serve immediately, with french bread for dipping into the sauce, or over cheesy grits.
