Ingredients

  • 2 tsp Garlic pwdr
  • 1 tsp Kosher (coarse) salt
  • 1 tsp Black pepper, coarsely grnd
  • 1/2 tsp Celery seed
  • 1/4 tsp Cayenne pepper

Directions

  1. This makes sufficient to cover a 2 pound roast.
  2. Combine ingredients.
  3. The night before cooking, apply a thin coat of extra virgin olive oil on the roast.
  4. Cover with rub and work it into the meat.
  5. Cover tightly with plastic wrap and chill overnight.
  6. Allow beef to come to room temp before grilling.
  7. Sear over direct high heat for 5 min per side.
  8. Finish cooking over Indirect medium heat.
