Santa Maria Tri Tip
Ingredients
- 2 tsp Garlic pwdr
- 1 tsp Kosher (coarse) salt
- 1 tsp Black pepper, coarsely grnd
- 1/2 tsp Celery seed
- 1/4 tsp Cayenne pepper
Directions
- This makes sufficient to cover a 2 pound roast.
- Combine ingredients.
- The night before cooking, apply a thin coat of extra virgin olive oil on the roast.
- Cover with rub and work it into the meat.
- Cover tightly with plastic wrap and chill overnight.
- Allow beef to come to room temp before grilling.
- Sear over direct high heat for 5 min per side.
- Finish cooking over Indirect medium heat.
