Pumpkin Cake With Cream Cheese Icing

Ingredients

  • 4 large eggs
  • 2 c. sugar
  • 1 c. salad oil
  • 2 c. canned pumpkin
  • 2 c. all purpose flour
  • 2 teaspoon soda
  • 2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 c. butter, softened
  • 1 (8 ounce) pkg. cream cheese
  • 1 (1 pound) box powdered sugar
  • 2 teaspoon vanilla extract

Directions

  1. Put together all cake ingredients in a large mixing bowl. Beat with an electric mixer till thoroughly blended. Pour batter into a buttered and lightly floured 13"x9"x2" pan.Bake at 350°F for 35 to 40 min, or possibly till cake tests done. Cool. Prepare Cream Cheese Icing.
  2. Put together icing ingredients in a mixing bowl. Beat with an electric mixer till smooth. Spread on cooled cake.For variety try adding 1/2 cup of raisins or possibly minced pecans or possibly walnuts to the cake batter.
  3. Makes 10-12 servings.
