Pumpkin Cake With Cream Cheese Icing
Ingredients
- 4 large eggs
- 2 c. sugar
- 1 c. salad oil
- 2 c. canned pumpkin
- 2 c. all purpose flour
- 2 teaspoon soda
- 2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 c. butter, softened
- 1 (8 ounce) pkg. cream cheese
- 1 (1 pound) box powdered sugar
- 2 teaspoon vanilla extract
Directions
- Put together all cake ingredients in a large mixing bowl. Beat with an electric mixer till thoroughly blended. Pour batter into a buttered and lightly floured 13"x9"x2" pan.Bake at 350°F for 35 to 40 min, or possibly till cake tests done. Cool. Prepare Cream Cheese Icing.
- Put together icing ingredients in a mixing bowl. Beat with an electric mixer till smooth. Spread on cooled cake.For variety try adding 1/2 cup of raisins or possibly minced pecans or possibly walnuts to the cake batter.
- Makes 10-12 servings.
