Ingredients

  • 4 x Pork chop
  • 1 tsp Extra virgin olive oil
  • 1 tsp Oregano, dry
  • 4 med Potato, red
  • 1 x Onion, sliced
  • 1 c. Chicken broth
  •     Black pepper
  • 1/2 c. Red peppers, roasted

Directions

  1. Season chops with pepper. Brown chops in oil, 10 minutes. Remove. Add in potatoes, onion, oregano. Cook 5 minutes., stirring occasionally. Add in chops, broth, and peppers. Heat to boil. Cover and cook over low heat 5 minutes.
