Ingredients

  • 1 1/4 lb celery root (celeriac) peeled, and
  •     cut into 1/2" pcs
  • 1/4 c. butter - (1/2 stick)
  • 1 x shallot minced
  • 1 pkt frzn petite peas - (16 ounce) thawed
  • 1 tsp celery salt
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Directions

  1. Boil celery root in large pot of boiling salted water till just tender, about 5 min. Drain. Heat butter in heavy large pot over medium heat. Add in shallot and saute/fry till just tender, about 3 min. Add in celery root, peas, and celery salt; saute/fry till vegetables are heated through, about 8 min. Season to taste with salt and pepper.
  2. This recipe yields 6 to 8 servings.
