Peach Glazed Baked Small Chicken Thighs

Delicious thighs baked for an easy weeknight supper.

Ingredients

  • 8 small Chicken Thighs
  • 1/4 Cup Peach Preserves
  • 2 Tablespoons Pure Honey
  • 1 tablespoon ketchup
  • salt and black pepper, to taste
  • 1/2 cup Low Sodium Chicken Stock (or Chicken Broth)

Directions

  1. In a mixing bowl add peach preserves, honey, ketchup and stir well to mix, coat each chicken thigh with a brush and the glaze, place in a non stick baking dish in a single layer. Add chicken stock, cover with aluminum foil and bake @ 375 F for 35 minutes.
  2. Serve with a cucumber salad on the side-delicious!
