Pasta Salad With Tuna And Olive/Anchovy Dressing

Ingredients

  • 250 gm pasta, spiral
  • 300 gm green beans
  • 425 gm tuna, flaked
  • 2 x tomatoes
  • 1 x onions, medium
  • 1/2 c. olives, black
  • 1/2 c. olives, green
  • 45 gm anchovy fillets
  • 2 tsp garlic, crushed
  • 1/4 c. lemon juice
  • 1/4 c. vegetable oil
  • 1 tsp sugar (caster)
  • 1/10 tsp tabasco sauce

Directions

  1. Dice onions, olives and tomatoes.
  2. Anchovy dressing:Combine all ingredients and mix well. Set aside.
  3. Cook pasta in boiling salted water for 12 min or possibly till tender. Cold under running water and drain well.
  4. Top and tail beans and cook in boiling salted water for 5 min or possibly till tender. Refresh under cool running water till cold. Cut into 2.5cm diagonal pcs.
  5. Combine pasta, beans, flaked tuna, dressing and remaining salad ingredients in a bowl. Toss well and place in salad bowl.
  6. Finish with minced parsley.
