Pasta Salad With Tuna And Olive/Anchovy Dressing
Ingredients
- 250 gm pasta, spiral
- 300 gm green beans
- 425 gm tuna, flaked
- 2 x tomatoes
- 1 x onions, medium
- 1/2 c. olives, black
- 1/2 c. olives, green
- 45 gm anchovy fillets
- 2 tsp garlic, crushed
- 1/4 c. lemon juice
- 1/4 c. vegetable oil
- 1 tsp sugar (caster)
- 1/10 tsp tabasco sauce
Directions
- Dice onions, olives and tomatoes.
- Anchovy dressing:Combine all ingredients and mix well. Set aside.
- Cook pasta in boiling salted water for 12 min or possibly till tender. Cold under running water and drain well.
- Top and tail beans and cook in boiling salted water for 5 min or possibly till tender. Refresh under cool running water till cold. Cut into 2.5cm diagonal pcs.
- Combine pasta, beans, flaked tuna, dressing and remaining salad ingredients in a bowl. Toss well and place in salad bowl.
- Finish with minced parsley.
