Ingredients

  • 3 1/2 lb Butternut squash
  • Salt & Pepper
  • 1 Olive oil
  • 1/2 cup Parmesan cheese

Directions

  1. Preheat the oven to 375 and line a cookie sheet with parchment paper - you might need 2 cookie sheets.
  2. Peel the squash and cut into cubes - I try and make it bite-size
  3. Place the squash in a large bowl - add a HEALTHY pinch of salt and pepper as well as cheese
  4. Stir till combine
  5. Place squash on the cookie sheet and bake for 30 minutes - at the 15 minute mark and flip the squash
  6. Enjoy!
