Ingredients

  • 2 x fish filets - (1/3 lb ea)
  •     (orange roughy, sea bass or possibly snapper)
  • 1 piece ginger root - (1" long) thinly sliced
  • 2 x green onions minced
  • 2 sm baby bok choy heads leaves separated
  • 4 x cilantro sprigs
  • 1 can straw mushrooms - (5 1/2 ounce)
  • 4 x garlic cloves
  • 2 Tbsp. soy sauce
  • 2 tsp sugar
  • 2 Tbsp. lime juice

Directions

  1. Heat the oven to 400 degrees. Place each fish filet on a large sheet of parchment paper or possibly foil which has been placed on a baking sheet. Proportionately distribute the ginger, green onions, bok choy, cilantro, straw mushrooms and garlic over the fish.
  2. Combine the soy sauce, sugar and lime juice in a small bowl and stir till the sugar dissolves, about 1 minute. Pour the sauce over the fish and vegetables then fold up the paper or possibly foil securely to seal.
  3. Bake till the fish flakes, about 15 min. This dish also works well with a boneless chicken breast too.
  4. This recipe yields 2 servings.
