Oatmeal and Craisin Cookies

Ingredients

  • ¼ cup butter
  • ½ cup granulated sugar
  • 1/3 cup brown sugar
  • 1/3 cup apricot preserves
  • 1 tsp vanilla extract
  • 1 egg
  • ¾ cup all-purpose flour
  • 1 cup quick-cooking oats
  • ½ (3.4 ounce) package vanilla instant pudding mix
  • ½ tsp baking soda
  • ¼ tsp. salt
  • ½ cup craisins

Directions

  1. Place butter in a large bowl; beat with a mixer at medium speed until fluffy. Add sugars, beating until blended. Add apricot preserves, vanilla, and egg, beating just until blended.
  2. Combine flour, oats, pudding mix, baking soda, salt, and craisins.
  3. Gradually add flour mixture to butter mixture, stirring just until combined.
  4. Drop by teaspoons on lightly buttered cookie sheets.
  5. Bake 350 degrees for 12-14 minutes or until lightly browned. Cool; 2 minutes or until firm. Remove cookies and place on wire rack to cool.
