Ingredients

  • 2 c. dry white wine
  • 5 x garlic cloves crushed
  • 8 doz Prince Edward Island mussels scrubbed, bearded,
  •     and rinsed
  • 1 c. chopped flat parsley leaves
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 4 Tbsp. extra-virgin extra virgin olive oil

Directions

  1. In a large cast-iron casserole, combine the wine and garlic and bring to a simmer. Add in the mussels and cook, uncovered, till they begin to open, about 3 min.
  2. As they open, sprinkle aggressively with parsley and black pepper. Once they are fully opened, remove from heat, sprinkle lightly with salt, drizzle with extra virgin olive oil and serve immediately.
  3. This recipe yields 6 servings.
