Ingredients

  • Ingredients for pancakes:
  • 2 cups Original Bisquick
  • 1 cup milk
  • 2 eggs
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 2 teaspoons fresh lemon juice
  • Ingredients for Blackberry Syrup:
  • 2 cups water
  • 2 cups sugar
  • 4 cups fresh blackberries
  • 1 tablespoon fresh lemon juice

Directions

  1. Directions for Syrup:
  2. In a medium saucepan, combine water and sugar over medium-high heat. Bring to a simmer, stirring frequently, until sugar dissolves. Cook until sugar mixture reaches 225 degrees on a candy thermometer. Add blackberries and lemon juice; cook until mixture reaches 223 degrees on a candy thermometer, stirring occasionally. (I added a little cornstarch to thicken the mixture) Cool slightly before serving.
  3. Directions for Pancakes:
  4. Stir all ingredients until blended.
  5. Pour slightly less than 1/4 cupfuls onto hot greased griddle.
  6. Cook until edges are dry. Turn; cook until golden.
  7. Yield: 14 pancakes
