Ingredients

  • 1 1/2 lbs. lean ground beef
  • 8 oz. can tomato juice
  • 1 egg white, beaten
  • 3/4 cup oatmeal
  • 1 cup chopped onion
  • diced green pepper (optional)
  • salt & pepper

Directions

  1. Preheat oven to 350 degrees
  2. Combine all ingredients and mix well with hands
  3. Press firmly into a loaf pan and bake for 1 hour (can also do 6 mini meatloafs in a muffin tin - cut cook time in half)
