Meatless Sotanghon Soup

I got this recipe from a box of Knorr chicken cubes. I tried it last night and it was really good!

Ingredients

  • 1 tbsp cooking oil
  • 1 tbsp of achuete seeds
  • 2 tsp of minced garlic
  • 3 tsp of chopped onion
  • 2 pcs Knorr broth cubes
  • 1 liter of water
  • 50 grams of bihon/sotanghon
  • 1/4 tsp of ground black pepper
  • 1/8 cup of thinly sliced carrots
  • 1/4 cup of thinly sliced pechay baguio

Directions

  1. Heat oil in a pan and stir the achuete seeds for 1 minute. Remove the seeds once done.
  2. In the same oil, saute garlic until lightly brown and onions are translucent, usually takes about 3 minutes.
  3. Add water. When it starts to boil, add Knorr Chicken Broth cubes and bihon/sotanghon noodles. Boil for 5 minutes. (if you're using sotanghon noodles, make sure to soak the sotanghon noodles in water for 5 mins before putting them in the soup)
  4. Season with pepper. Add the carrots and pechay Baguio then simmer for 2-3 minutes then remove from heat. Serve hot.
