Meatless Meat Balls

Even the non-vegetarian guests wanted the recipe last time I served these!

Ingredients

  • ½ block of firm tofu
  • 1 egg
  • ¼ c of pine nuts
  • 2/3 c of marinated artichoke hearts
  • 1/3 c of feta cheese
  • 1/3 c of sun dried tomato
  • 1/3 c of roasted red bell pepper, chopped
  • ½ yellow onion, chopped
  • 3 cloves of crushed garlic
  • 2 c of bread crumbs
  • 1 tbsp of Italian seasoning
  • Salt and Pepper to taste

Directions

  1. Blend tofu, egg, pine nuts, artichoke, cheese, tomato and pepper in a food processor until smooth.
  2. Sauté onion with garlic till translucent and add to mixture.
  3. Add remaining ingredients. Form into 1 inch balls.
  4. Brown in olive oil over medium heat. Place in baking dish, cover with spaghetti sauce and bake at 350 for 30 minutes.
