Meatless Meat Balls

- ½ block of firm tofu
- 1 egg
- ¼ c of pine nuts
- 2/3 c of marinated artichoke hearts
- 1/3 c of feta cheese
- 1/3 c of sun dried tomato
- 1/3 c of roasted red bell pepper, chopped
- ½ yellow onion, chopped
- 3 cloves of crushed garlic
- 2 c of bread crumbs
- 1 tbsp of Italian seasoning
- Salt and Pepper to taste
Directions
- Blend tofu, egg, pine nuts, artichoke, cheese, tomato and pepper in a food processor until smooth.
- Sauté onion with garlic till translucent and add to mixture.
- Add remaining ingredients. Form into 1 inch balls.
- Brown in olive oil over medium heat. Place in baking dish, cover with spaghetti sauce and bake at 350 for 30 minutes.
