Marinated Chicken Thighs

This would also be delicious with pork.

Ingredients

  • 1 c. extra virgin olive oil
  • the juice of 1 lemon
  • 1 tbsp. soy sauce
  • 1 tbsp. sugar
  • 1 teaspoon chopped garlic
  • 1 teaspoon chopped fresh ginger or 1/4 teaspoon ground ginger
  • Salt and freshly grnd pepper to taste
  • 8 chicken thighs
  • 1 bunch green onions

Directions

  1. In medium mixing bowl, whisk together extra virgin olive oil, vinegar, lemon juice, soy sauce, sugar, garlic, ginger and salt and pepper.
  2. Pour mix over chicken thighs and cover and chill overnight.
  3. Just before serving, heat gas or charcoal grill.
  4. Remove chicken thighs from marinade and grill skin-side down over medium heat about 8 to 10 min, or until skin is crispy.
  5. Flip them over, brush with marinade and cook 4 to 6 min more until done. You do not want any redness remaining at the bone.
  6. While chicken thighs finish cooking, skewer green onions and brush with marinade.
  7. Grill a couple min a side, or until they are slightly charred and begin to soften.
  8. Serve chicken and onions over steamed rice.
