Mandarin Orange Cake

My mom used to make this cake when I was little and I loved it. When I made it recently, after quite a few years, I realized that the cake is fat free with no oil or butter. I also used low fat cream cheese for the frosting.

Ingredients

  • Cake
  • 2 c flour
  • 2 c sugar
  • 2 eggs
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 - 11 oz cans mandarin oranges
  • Frosting
  • 8 oz. block of cream cheese
  • 1 box of powdered sugar
  • 2 teaspoons milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter

Directions

  1. For the cake: drain the juice from one can of oranges but keep the juice from the other can. Place all the ingredients in a mixing bowl & beat well with a mixer. Pour into ungreased jelly roll pan & bake for 30 to 35 minutes at 350 degrees.
  2. For the frosting: after the cake has cooled, beat all the ingredients in a mixer and frost cake.
