Lobster Taquitos With Tomatillo Salsa

Ingredients

  • 8 ounce cream cheese
  • 1/3 c. shredded cheddar cheese
  • 1/3 c. shredded jack cheese
  • 1 tsp minced garlic
  • 1 1/2 c. cilantro stems discarded
  • 1 c. minced red onion
  • 1/3 c. bread crumbs
  • 1/2 tsp cumin
  • 1/2 tsp cayenne pepper
  • 1 1/2 lb cooked lobster meat minced
  • 1/2 c. oil
  • 8 x corn tortillas
  • 8 x toothpicks
  • 7 x tomatillos peeled, rinsed, and roughly minced
  • 1/2 lrg yellow onion diced
  • 1 Tbsp. extra virgin olive oil
  • 1/2 bn cilantro
  • 1 c. minced fresh pineapple
  • 1/4 c. brown sugar
  • 1/4 Tbsp. cumin
  • 1/4 Tbsp. chili pwdr Salt to taste Freshly-grnd black pepper to taste

Directions

  1. To make Salsa: Saute/fry tomatillos and onions till brown in extra virgin olive oil, about 1 minute. Transfer to food processor, adding remaining ingredients. Puree till smooth.
  2. To make Taquitos: Mix cheeses, garlic, cilantro, onion, bread crumbs and spices in mixing bowl. Transfer small batches into food processor and puree till smooth, transferring each batch into a second mixing bowl till all has been pureed. Add in lobster meat and mix thoroughly.
  3. Heat about 1/4 inch oil in a saute/fry pan. One by one, dip tortillas into warm oil for one second, just to soften. Allow to cold, then add in 1/4 c. lobster mix. Roll into taquito and hold together with a toothpick. Repeat process until all mix is gone. Fry in saute/fry pan with oil about two min till crunchy. Top with tomatillo salsa.
  4. This recipe yields 18 taquitos.
