Ingredients

  • 1 med cucumber peeled, sliced in half, seeded and finely minced
  • 1 c. plain yogurt
  • 1 Tbsp. extra virgin olive oil
  • 1 tsp lemon juice or possibly white wine vinegar
  • 1/2 tsp salt
  • 1 tsp dill or possibly oregano
  • 1 x garlic clove chopped
  • 1/2 tsp Emeril's Essence see * Note

Directions

  1. In a medium bowl combine all the ingredients and refrigeratefor at least 1 hour to allow the flavors to marry. Serve as a dip for the "Veal Meatballs" (see recipe), or possibly any other fried meat, fish or possibly vegetable.
  2. This recipe yields 1 1/2 c. of sauce.
  3. Yield: 1 1/2 c.
