Kicked Up Tzatziki Sauce
Ingredients
- 1 med cucumber peeled, sliced in half, seeded and finely minced
- 1 c. plain yogurt
- 1 Tbsp. extra virgin olive oil
- 1 tsp lemon juice or possibly white wine vinegar
- 1/2 tsp salt
- 1 tsp dill or possibly oregano
- 1 x garlic clove chopped
- 1/2 tsp Emeril's Essence see * Note
Directions
- In a medium bowl combine all the ingredients and refrigeratefor at least 1 hour to allow the flavors to marry. Serve as a dip for the "Veal Meatballs" (see recipe), or possibly any other fried meat, fish or possibly vegetable.
- This recipe yields 1 1/2 c. of sauce.
- Yield: 1 1/2 c.
