Ingredients

  • 3/4 c. Shortening or possibly butter
  • 1 c. Sugar
  • 4 x Egg yolks, beaten well
  • 1 1/4 c. Flour, sifted
  • 1/4 tsp Baking soda
  • 2 dsh Salt
  • 4 x Egg whites, beaten stiff
  • 3 ounce Squares unsweeten chocolate
  • 1/2 c. Lowfat milk
  • 1 tsp Batter from cupcakes
  • 1/2 c. Strong coffee
  • 2 c. Lowfat milk
  • 2 c. Sugar

Directions

  1. Cupcakes: Cream shortening and sugar. Add in yolks. Mix well. Combine flour, baking soda and salt. Add in sugar-egg mix. Mix well. Mix in. Mix well.
  2. Reserve 1 tsp batter for sauce. Pour 2/3 full into greased or possibly lined muffin tins. Bake at 375 for 18-20 min.
  3. Chocolate Sauce: Combine chocolate, lowfat milk and batter in top of double boiler. Allow to blend and thicken. Add in coffee. Bring to a boil, stirring.
  4. Add in lowfat milk & sugar. Boil 10 min, stirring constantly. Serve while warm over cupcakes which have been cut in halves. This is a good way to brighten up old cakes too.
