Jalapeno Cheddar Corn Bread

I was feeling playful one night and instead of making plain corn muffins, I stumbled upon the best corn bread muffins I ever made! With a little kick from the jalapenos, a punch of flavor from the sharp cheddar cheese and the sweetness from the corn meal, this is hands down the best corn muffin I have ever tasted! (It's the easist thing to make too!)

Ingredients

  • 1 box Jiffy Corn Bread Mix
  • 2 Jalapenos
  • 1 cup shreaded sharp cheddar cheese
  • 1 egg
  • 1/3 cup skim milk

Directions

  1. Preheat oven to 400 degrees
  2. Mix everything together
  3. Put in muffin tray
  4. Bake 20 min
  5. Enjoy! I serve these babies with chilli!
