Ingredients

  • 8 c. thinly-sliced red cabbage (abt 1/2 large head)
  • 1/4 c. minced Italian parsley
  • 2 Tbsp. liquid removed capers
  • 2 Tbsp. extra virgin olive oil (preferably extra-virgin)
  • 2 Tbsp. red wine vinegar
  • 2 Tbsp. water
  • 1 Tbsp. chopped garlic Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Combine red cabbage, parsley and capers in large bowl.
  2. Whisk oil, vinegar, 2 Tbsp. water and garlic in small bowl to blend. Add in to cabbage mix and toss to blend. Season to taste with salt and pepper. (Can be prepared up to 3 hrs ahead. Cover and chill.)
  3. This recipe yields 6 servings.
  4. Comments: Add in canned white tuna (packed in water) for a delicious main course.
