Ingredients

  • 4 slc High fiber bread, stale
  • 1 c. Low fat cottage cheese
  • 2 x Onions, chopped
  • 13 1/2 ounce Can evaporated skim lowfat milk
  • 3 x Large eggs
  • 1 Tbsp. Parsley, chopped Salt & pepper to taste
  • 2 Tbsp. Bacon bits, optional

Directions

  1. Line 10" pie pan with bread. Spread with cottage cheese and onions.
  2. Combine remaining ingredients except bacon bits, in blender. Cover; blend till smooth. Pour over onion layer. Sprinkle with bacon bits. Bake at 425 for 35-40 min. Cut into 8 wedges to serve.
