High Fiber Bread Quiche
Ingredients
- 4 slc High fiber bread, stale
- 1 c. Low fat cottage cheese
- 2 x Onions, chopped
- 13 1/2 ounce Can evaporated skim lowfat milk
- 3 x Large eggs
- 1 Tbsp. Parsley, chopped Salt & pepper to taste
- 2 Tbsp. Bacon bits, optional
Directions
- Line 10" pie pan with bread. Spread with cottage cheese and onions.
- Combine remaining ingredients except bacon bits, in blender. Cover; blend till smooth. Pour over onion layer. Sprinkle with bacon bits. Bake at 425 for 35-40 min. Cut into 8 wedges to serve.
